Healthier strawberry banana smoothie


Lately, getting my two year old to consume anything that is not shaped like a goldfish cracker has been, let's just say a challenge. She won't eat meat or beans, refuses most vegetables, and only tolerates certain fruits. She is the epitome of a picky eater, like most kids her age. So when my mom suggested making her smoothies and sneaking in a vegetable or two, I had a complete duh moment. Duh, why didn't I think of that? It makes perfect sense, when you think about it. Kids are more likely to drink juice and milk all day, why not make them something fruity and frothy such as a smoothie?

So that's what I did. I made strawberry banana smoothies and snuck in some spinach. It tastes great and you can't even tell there's a vegetable in it, let alone spinach. It's perfect for breakfast, lunch, or an afternoon snack and so easy to make which is all the more reason to love them.

 Healthier strawberry banana smoothie
  • 8-10 strawberries, hulled and halved
  • 1/2 cup creamy strawberry yogurt
  • 3/4 cup of milk
  • 1/2 cup of baby spinach
  • 1 banana, cut into thirds
  • 4-6 ice cubes
  • 1 1/2 Tbs sugar
Blend together the strawberries, milk, banana, yogurt, spinach, and sugar until liquefied. Add in the ice cubes, two at a time and blend. Serve chilled. Makes 2 servings.
