S'mores brownies



One of my all-time favorite movies growing up was The Sandlot. 

From the elaborate stories the kids told about "the beast," to the friendships formed over baseball and Babe Ruth, everything about that movie makes me smile. Watching that movie now makes me think of Summertime and playing outside with my friends in the dirt. It also makes me think of s'mores. I remember that iconic scene when Ham is making himself a s'more and offers one to Smalls and Smalls is confused because he thinks he's asking him if he wants some more of nothing, rather than a "s'more" and then Ham goes "you're killing me Smalls." That is one of my favorite lines from any movie and that's what my family and I say to one another when we're having a "Smalls" moment.

 Anyways, if you can recall, s'mores are on my film feasts list of iconic movie food to make. Well, I did one better. I made s'mores brownies. Can you say yum?? I've been looking at recipes of these for awhile now and finally got around to making them this week. They are so good and very easy to make, which is always a bonus. They are a new take on the classic s'mores and I'll bet you anything the kids from the Sandlot would have made them too, if only they weren't so busy trying to get their baseball back...


S'mores brownies:
Recipe adapted from Browneyed baker's S'mores brownies

For the graham cracker crust
  • 1 1/2 cups graham crackers, crushed
  • 1/8 cup of sugar
  • 1/2 stick of butter, melted
  • a dash of salt
Preheat the oven to 350 degrees. Line a 7x11 inch baking pan with foil hanging over the sides. Spray your foil with cooking spray and set aside. In a mixing bowl, combine the graham crackers, butter, sugar, and salt until mixture looks like wet sand. Press mixture into your baking pan until evenly distributed. Bake for 15 minutes or until golden brown.  Set aside.

For the brownies:
  • 2 eggs
  • 1/2 cup butter, melted
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1 tsp vanilla extract
  • 1/2 cup semisweet chocolate chips
  • 3/4 bag of mini marshmallows (for topping)
  • 5-6 graham crackers broken into pieces (for topping)
Leave oven on at 350 degrees. In a large bowl, mix together the melted butter, brown and white sugar, eggs, and vanilla. Add in the flour, baking powder, salt, and cocoa powder and mix until just combined. Stir in the semisweet chocolate chips. Pour brownie batter over the graham cracker crust and put back in the oven for 25-30 minutes, or until brownies are set and not watery. Put the oven on broil. Carefully, pour about 3/4 of the bag of marshmallows on top of the brownies and leave in the oven for about a minute, or until marshmallows have browned (note: The marshmallows can burn fast! Do not leave the kitchen for this step, check every 20 seconds or so.) Top with the broken pieces of graham crackers. Let cool, then serve with milk! Makes 8-12 brownies.
