Salsa egg-white omelette

I've been making a lot of breakfast foods lately...
I know Burt isn't complaining, I've been specifically making them for him to try. Since he is back at the gym, he has been trying to eat healthier, and I've been trying to cook healthier. Of course, it's difficult for me given my love for all things chocolate.

But I'm working on it. Here's yet another omelette I made this week for Burt's breakfast, this time an egg-white omelette.



Let me just say, this was much easier to make than a regular omelette, and just as tasty. The salsa adds a nice bit of heat and flavor and brings the whole meal together. The omelette itself is stuffed with a bit of cheese and spinach. It's pretty healthy and pretty darn tasty, too. :)

Salsa egg-white omelette
  • 1/2 cup fresh spinach
  • 1/2 cup shredded cheddar cheese
  • 3 egg whites
  • 3 Tbs salsa (I used store bought)
  • salt and pepper to taste

Heat 2 skillets over medium heat and spray with cooking spray. Whisk your egg whites in a bowl and add a dash of salt and pepper. Add your spinach to one skillet and saute, and add your beaten egg whites to another. Saute your spinach until it begins to shrink, then turn off the heat. When your egg whites look done, run a spatula along the disc to check for doneness, then flip omelette over. Let cook for another minute. Off the heat, add your cheese and spinach and fold omelette in half. Spoon your salsa over the top and serve hot!

  1. I make this omlet every morning...never gets old! Spray small bowl with cooking spray; tear up 1/2 baby spinach; pour in 3 egg whites (purchased as egg whites so I am not tempted to use yolks;) sprinkle cheddar cheese. Put in microwave for 2 minutes. Remove, and top with bottled salsa. Yum. Very filling.
